Behind SAN are two people with completely different stories — and for that very reason, the same vision.

Kevin Chen
Head Chef & Co-Founder · Qingtian, China

Raised in Qingtian, trained in fine dining from Tyrol to Vienna. It became clear early on that cooking meant more to him than technique alone. Kevin developed a cuisine that takes Asian craftsmanship seriously without being bound by tradition. Precision, depth, genuine technique — and a curiosity that never stops. His inspiration comes equally from childhood memories, modern kitchens, and spontaneous ideas. Hospitality runs in the family. It's in his blood.


Mark James Rogado
Head of Operations & Co-Founder · Manila, Philippines

Born in Manila, shaped by Filipino, Japanese, and Spanish influences. Over two decades in international five-star hospitality — Marriott, Renaissance, Shangri-La, Rosewood. A specialist in pre- and re-openings, franchise launches, and those defining moments when an empty space becomes somewhere people actually want to be.

He has brought places to life — lobbies that feel like arrival. Restaurants you don't forget. Teams that come together before the first guest ever walks through the door. Always for others. Always with one quiet thought in the back of his mind: Someday, for myself.

That moment is now. With SAN, Mark is realising a vision that is entirely his own — no corporate guidelines, no outside blueprint. Just everything he has learned over two decades: that great places aren't built. They're felt.

His instinct has always been for the feeling behind it all: how an evening unfolds. How guests are welcomed. Why some places stay with you long after you've left.
